Production Supervisor
Position Summary
The Production Supervisor oversees daily operations within the pork processing facility, driving safety, quality, yield optimization, and line efficiency across primary processing (Kill Floor/Harvest) and secondary fabrication (Loin Boning/Cut Floor). This role leads floor personnel, enforces USDA/FSIS regulatory standards, and maintains strict adherence to Food Safety and Quality Assurance (FSQA) protocols while driving operational performance.
Key Responsibilities

Operational Execution & Output: Manage daily shift production targets for harvest speed, line balance, and loin boning yields; monitor primal yields, cut specifications, and piece counts to minimize giveaway and waste.

Team Leadership & Direct Supervision: Train, coach, and supervise hourly production staff; manage line rotation, skill matrix progression, attendance, and knife-sharpness maintenance programs across the floor.

Humane Handling & USDA Compliance (Kill Floor): Enforce strict compliance with USDA/FSIS guidelines, Good Manufacturing Practices (GMPs), HACCP, and Systematic Approach to Humane Handling (SAHH).

Quality & Specification Control (Loin Boning): Inspect product cuts for trim standards, boning quality, fat cover specifications, and proper boneless/bone-in yield optimization.

Safety & Workplace Health: Enforce OSHA standards, ergonomic guidelines, Personal Protective Equipment (PPE) requirements, and knife safety protocols to prevent workplace injuries.

Cross-Department Collaboration: Partner with QA/FSIS inspectors, maintenance technicians, and sanitation crews to resolve production bottlenecks, equipment downtime, and pre-operational checks.
Qualifications & Requirements

Experience: 3+ years of supervisory experience in pork or protein processing (harvest, kill floor, cut floor, or boning room preferred).

Technical Knowledge: Strong understanding of USDA/FSIS regulations, HACCP principles, pork carcass dressing/grading, and knife work dynamics.

Leadership Skills: Proven ability to manage diverse workforces in high-speed, cold/wet manufacturing environments.

Education: High school diploma or GED required; Bachelor’s degree in Animal Science, Meat Science, or Agribusiness is a plus.
