Position Summary

Responsible for directing, coordinating, and overseeing the day-to-day operations of the Food and Beverage Department, including personnel management, customer service, fiscal oversight, and administrative duties. Promotes and delivers World Class Guest Service to all resort and casino employees and guests. Ensures compliance with internal controls, regulatory requirements, and industry best practices while maintaining the highest standards of customer satisfaction.

 

Essential Functions and Responsibilities

Essential duties and responsibilities may include, but are not limited to, the following:

Departmental Leadership:

  • Establishes and implements short- and long-term departmental goals aligned with the organization’s vision and strategy.
  • Stays informed on industry trends and best practices, sharing relevant insights with management, peers, and team members.
  • Maintains updated standard operating procedures (SOPs) and ensures compliance with tribal, state, and federal regulatory requirements.
  • Develops, manages, and monitors departmental budgets to ensure financial objectives are met or exceeded.
  • Collaborates with executive management, directors, and managers to drive the organization’s mission, vision, and objectives.
  • Enforces department policies and objectives in alignment with the resort and casino’s organizational mission.
  • Resolves internal and external guest issues in a timely and professional manner.
  • Develops financial and marketing strategies to optimize revenue and ensure operational efficiency.
  • Controls labor and operational expenses while analyzing variances and implementing corrective actions.
  • Implements initiatives to enhance customer service, expense control, and cash management for maximum profitability.
  • Continuously assesses and refines strategic business and operational plans to enhance efficiency and implement best practices.
  • Works with executive leadership to develop revenue strategies and maximize financial performance.
  • Ensures robust internal controls to prevent fraud, loss, theft, and safety incidents.
  • Develops creative strategies to drive revenue growth.
  • Fosters an open and welcoming environment that encourages skill development and team engagement.
  • Greets guests and maintains a positive, guest-friendly atmosphere through prompt and courteous service.

Personnel & Administrative Tasks:

  • Monitors staff performance, behavior, and attendance to ensure compliance with organizational policies, directing disciplinary action as needed.
  • Oversees the recruitment, selection, training, coaching, and development of Food and Beverage Department employees.
  • Creates and manages staff schedules, ensuring alignment with business needs.
  • Reviews and approves or denies PTO requests based on scheduling requirements.
  • Conducts staff meetings, training sessions, and performance evaluations.
  • Ensures a skilled, motivated, and engaged workforce through effective communication and customer service training.
  • Provides coaching and guidance to direct reports to support long-term career development.
  • Ensures all company and departmental records are securely stored in compliance with organizational policies.
  • Occasionally performs the duties of subordinates and assists with special projects as needed.

Accountability and Supervision

Oversees employment-related actions in accordance with company policies and applicable laws. Responsibilities include hiring, training, scheduling, performance management, disciplinary actions, and resolving employee concerns.

Education and Experience

  • Bachelor’s degree in Hotel Management, Restaurant Management, Culinary Arts, or a related field, or equivalent hospitality experience.
  • Ten (10) years of experience in hotel and/or casino food and beverage operations within a high-volume environment.
  • Five (5) years of experience in a Food and Beverage Director or Executive Management role.
  • Direct or relevant chef experience preferred.
  • Experience managing multiple food and beverage outlets.

Special Requirements, Licenses, and Certifications

  • Must be able to acquire and maintain a gaming license as required by regulatory authorities.
  • Must successfully pass a pre-employment drug test and background check.
  • Must be flexible with work schedules, including availability on nights, weekends, and holidays as needed.
  • Must maintain all required certifications and training mandated by the company.
  • Must possess and maintain a valid driver’s license. Driving records will be reviewed for compliance with company policy.
  • Must hold a valid state Alcoholic Beverage Service Certification.
  • Must acquire and maintain all necessary alcohol service licenses.

  • Thorough understanding of federal, state, and tribal regulatory requirements relevant to food and beverage operations.
  • Ability to receive and implement feedback effectively.
  • Sound decision-making abilities with attention to detail.
  • Understanding of internal control measures related to department operations.
  • Ability to manage multiple tasks under pressure and meet deadlines with minimal supervision.
  • Knowledge of OSHA standards and FDA food regulations.
