Purchasing Manager – Hi Noon Hospitality

We are seeking a highly skilled and knowledgeable Seafood Purchasing Manager to oversee the procurement of fresh, frozen, and specialty seafood products. This role requires strong vendor relationships, expertise in seafood sourcing and sustainability practices, and the ability to balance quality with cost efficiency. The Seafood Purchasing Manager will collaborate closely with chefs, operations leaders, vendors, and farms to ensure our restaurants receive consistent, high-quality seafood that aligns with our brand standards.

Key Responsibilities

  • Develop and manage vendor relationships with seafood suppliers, distributors, and local fisheries.

  • Negotiate pricing, contracts, and terms to secure the best quality and value.

  • Monitor seafood market trends, seasonal availability, and sustainability standards to make informed purchasing decisions.

  • Ensure compliance with health, safety, and sustainability regulations.

  • Collaborate with culinary teams to forecast needs, identify new products, and support menu development.

  • Track inventory, usage, and costs to optimize purchasing and reduce waste.

  • Implement quality control checks to ensure all seafood meets company specifications.

  • Prepare reports and analyses on purchasing performance, cost savings, and vendor performance.

Qualifications

  • 3–5 years of purchasing or procurement experience, preferably in seafood or perishable food categories.

  • In-depth knowledge of seafood species, grades, sustainability certifications, and handling requirements.

  • Strong negotiation and vendor management skills.

  • Analytical skills with the ability to track costs and identify efficiencies.

  • Excellent communication and relationship-building skills.

  • Background in hospitality, restaurants, or food manufacturing is strongly preferred.

  • Manage vendor relationships, negotiate contracts, and oversee purchasing across multiple locations.

  • Track and analyze inventory, food, and beverage costs to optimize profitability.

  • Implement and maintain purchasing systems to streamline operations.

  • Collaborate with chefs, managers, and leadership to ensure product quality, timely delivery, and consistency.

  • Provide strategic recommendations to improve efficiency and reduce costs.
